How to cook Tapioca Pearls

As the prince of milk bubble tea, tapioca pearls’ soft and chewy texture compliments this unique drink.

Tapioca is a gluten-free thickener, gelling agent, and baking ingredient from yuca, the root of a cassava or manioc tree. It comes in different forms, such as tapioca flour and pearl tapioca, ranging in pearl size between 1 to 8ml in its uncooked stage.

Bubble Tea Empire sells quality tapioca pearls. Once cooked, it is soft and chewy and sweetened with brown sugar syrup.

The sweet taste of your favourite tea paired with chewy tapioca balls makes up the unique element that is bubble tea. The pearls break away from the same boring consistency that other drinks have. It’s served in transparent cups with a fat straw so that - as you sip - the tapioca balls come shooting up and can be chewed as you swallow down the delicious drink. There really is no other like it!

Method
  • Pour the water into a pot or large saucepan and bring to a rolling boil
  • Pour tapioca into the boiling water
  • Stir the tapioca lightly so that it doesn't stick to the bottom of the pot
  • Let the tapioca pearls float to the top
  • When they float, cover the pot with a lid
  • Cook for 20 minutes on high heat with cover on
  • Stir every 5 minutes, maintaining a rolling boil
  • After cooking for 20 minutes, take the pot off the heat and let sit for another 20 minutes covered
  • Drain the pearls with cold water to stop the cooking process
  • Pour the cooked tapioca into a container with a lid
  • Cover with the brown sugar syrup adding a caramel-like flavour and softening the texture. Soak at least 60 minutes before use
  • Finally, you can now either add them to your favourite tea or milk drink

NOTES: If you want to make more tapioca, make sure there is a minimum of 7 parts water to 1 part tapioca. Also, increase your syrup. Homemade tapioca pearls will last 6 months (uncooked). However, we recommend NOT cooking them more than a few hours before the time. They will become hard and unpleasant as they chill, so they should be consumed within 4 hours maximum.
